Schools Can Do More to Reduce Food Waste in the Cafeteria

There is a lot of food waste that occurs at schools. The Smarter Lunchroom movement is working to reduce food waste and get kids to eat more fruits and vegetables at the same time. Using behavioral economics, the Smarter Lunchroom movement uses simple “nudges” to encourage students to eat more fruits and vegetables offered in the cafeteria. Locally the UC Cooperative Extension of San Mateo County is supporting school districts to redesign their cafeterias using Smarter Lunchroom strategies.
